1. Turn off the laptop immediately, turn it upside down to let the liquid drain out, and remove the battery before attempting to dry the computer. Yahoo Tech has a more detailed how-to here.
Even then, coffee, especially with sugar, can leave parts of your keyboard useless. In a pinch, some combination of other keys can get you limping through a demo. The "Tab" key, for example, can move you around a screen, and if you can't type a specific letter, try copying it from another word.
