"The most unusual spice I always stock in my pantry is Marash pepper. These red-pepper flakes come from a town in Turkey called Kahramanmaras. Marash is extremely flavorful and bright, somewhat hot but not superhot. And it's beautifully clean, so there are no seeds. You can mix it with a little lemon - or citrus juice of some sort - and it makes a paste that you can use as a rub. I use it in salads, pastas, sauces."
