Delicaé Gourmet's Glazes and Ganaches
These sweet blends of fruit, wine and balsamic vinegar are mixed by hand at Delicaé Gourmet's farm in Tarpon Springs, Fl. Founded by retired chiropractor Barbara Macaluso and Lenny Macaluso, Tina Turner's former lead guitarist, the company has produced gourmet sauces and condiments for over a decade. The Macalusos started developing these glazes last year with the aim of creating a versatile balsamic sauce, without the dominant vinegar taste. The ganaches, which combine the glazes with chocolate, butter and cream, offer a rich, creamy sauce that can be used as a spread or between layers of a cake.
