You can adjust the privacy settings on already-installed apps by clicking on the "Home" menu at the top of the Facebook page, choosing "Privacy Settings" and then clicking "Edit Settings" next to "Apps and Websites."
That pulls up a control panel that will let you edit app settings -- but you'll need to adjust them individually for every single app you have installed.
