That's the lesson of Silhouette Brands, the maker of Skinny Cow and Skinny Carb ice cream, which Dreyers Grand Ice Cream recently scooped up for $71 million in cash. Sam Pugliese, 38, and Marc Wexler, 42, launched Silhouette Brands in 1993 after Pugliese tried some fat-free frozen yogurt at a food show and decided to create a tastier concoction. At the time of sale, the five-person company had the two top-selling products in the "good for you" ice cream category, which is the fastest-growing category in the industry. —D.C.
