Modern Mexican dominated the culinary scene this year, but Spain is expected to become the "it" cuisine.

Every major market in the country has roughly two to three Spanish restaurants set to open, according to Freeman.

"The food is shareable and Spain is a hot destination. There is a lot of escapism associated with dining out -- you travel to that country when you eat there."
