Founded by marine biologists looking to breed beautiful bivalves with hardy shells, Hog Island harvests more than two million oysters a year off the coast of Marshall, Calif. It sells its Kumamotos, which take about two years to mature, on its Web site, to upscale restaurants, and at San Francisco's Ferry Building.
