As lovely as a week or two of cooking classes would be, maybe you're looking for a quicker fix. Amelia Island, just over the Georgia border on Florida's Atlantic coast, offers the usual resort amenities: PGA golf course, tennis, pools, and a gorgeous beach. But depending on the season, there are also two-day themed cooking courses on offer at Salt, the fine-dining restaurant on the property. In August, up to 20 students will explore the art of barbeque, and October will bring an Oktoberfest program with sauerbraten and pretzels.
Chef de cuisine Rick Laughlin and his sous chefs welcome students into the kitchens from 9 a.m. to 2 p.m., starting with a tour and explanation of the roles in the kitchen. The cooks show the students how to work the line, and demonstrate the elements of each dish, then everyone sits down together to share the lunch they've prepared. And there's still time for a round of golf after you're finished!
