There's hardly any competition for basic food service employees, but it's a different story for skilled culinary professionals.

Inverness Hotel, a luxury resort and conference center in Denver has had several openings in its kitchen for about six months, and is currently looking for an entry-level pastry cook and a lead-level cook.

But the industry is so fast moving, new talent is often swept away by the hot restaurants in town, said Linda McGill, HR director.

Plus, because the Inverness is a hotel, it needs cooks who are available to work 24 hours of the day and 365 days a year.

"It's demanding, fast paced, and requires a certain high-level skill set," McGill said. "We're always looking for great people, but we just don't seem to have enough candidates to go around."
