Working the Night Shift

(FORTUNE Magazine) – HERE'S ONE WAY TO BEAT JET LAG: Nightlife impresario RANDE GERBER keeps his watch on L.A. time while he's on the road (his 19 hot spots include the Whiskey bars in New York City, Chicago, and Las Vegas). Gerber, who is married to Cindy Crawford, will soon open new properties in L.A., Vegas, and Madrid, the latter marking his first European venture. We caught up with him in New York as he prepped for the night shift at Stone Rose lounge.

DAYS ON THE ROAD: Anywhere from five to ten days a month. I'm in Vegas almost once a week.

FAVORITE WAY TO FLY: Virgin or British Airways have the best sleeper seats for flights to Europe. For L.A. to New York, I was flying American, but I'm switching to United P.S.--it's a premium-service plane, so they're really nice.

BEST PLACE TO STAY: If I have a place there, I'll stay at that hotel. I have bars in some W hotels, and soon we'll be in the Sofitel in L.A. I'll also stay at the Four Seasons in most cities, or the Ritz. Claridge's in London.

BEST PLACE TO DINE WITH YOUR SUPERMODEL WIFE: Our house. It's hard to be romantic when people are checking out who you're with--at least in my situation. But there's one place we love in Paris, an Italian restaurant called Stresa.

HOTTEST NIGHTLIFE: Vegas, for sure.

UP-AND-COMING CITY: Austin. There's a big music scene there. Phoenix is on my short list too.

SIGNATURE DRINK: Straight vodka or whiskey--Grey Goose or Johnnie Walker Blue.

TRAVEL TRICKS: I never check a bag. I also drink good wine. That definitely makes traveling easier.
