Roth Kase's Private Reserve
Roth Kase, based in Monroe, Wis., recently launched this semi-hard cheese that's been cured for nine months. It won first prize last year in the American Original category of the American Cheese Society's annual competition. CEO Fermo Jaeckle, who is descended from a long line of cheese makers originating in Switzerland, founded the company in the early nineties with two cousins, turning his family's import and distribution business into the only domestic producer of the Swiss classic, Gruyère.
