Knipschildt Chocolatier's "La Madeline Au Truffe" uses a French Perigord truffle (itself a cool grand per pound) and envelops it in a ganache infused with Italian truffle oil, dipped in chocolate and cocoa powder.
"And then we pack it into a little gold pouch and put it inside a really cute little box," said Fritz Knipschildt, who never underestimates the power of good packaging.
Each chocolate comes with a number, and the chocolatier has sold on average two per month since its introduction. That number seems not to be slowing during the recession. The company just got an order for three more.
